Last time I flew into CDG, I had 100ish AI planes (UT2) loaded. IMO, bloom, aircraft self-shadowing, road traffic go away, but I personally keep shadow and some AI. I double the idea to turn down some settings.

Not sure if you're using a tower or a laptop, but if you're using a laptop, make sure your Windows power-saving mode is set to "High Performance." Generally, your target FPS should be set to unlimited. Make sure that you're either running FSX with the Acceleration pack or with SP2 installed. I personally set antialiasing to 4x or 8x and anisotropic filtering to 6x or 8x, although 4x wouldn't hurt.
